Summer, hot, it’s time to prepare a fresh recipe with our muffins. We have tried for you the filling of the lemon or milk cake with lemon cream and lots of seasonal fruit on top, decorating as you like.
Ingredients lemon cream
- 500 ml of milk
- 2 eggs
- 150 gr of sugar
- 1/2 lemon juice
- 30 g cornstarch
- grated rind of 1 lemon
- Optional: 1 teaspoon of Limoncello
Preparation:
Beat the eggs together with the sugar with a whisk, then heat the milk in a saucepan. Add the corn starch to the mixture a little at a time, trying to dissolve any lumps. Then add to the mixture the heated milk, the lemon rind and heat it all over a low flame.
Continue stirring until the mixture thickens. When everything is compact, add the limoncello and a few drops of lemon, continuing to stir. The cream must be compact, but not too liquid, if it is too thick it is corrected with melted butter, if it is too liquid, some starch is added. Finally, pour it into a bowl, covering with film and let it cool.
Once cooled it is ready to stuff our pies, using a sac a poche.
At this point we add the fruit to small slices, creating muffins different in taste and colour and keep them in the fridge. Perfect in summer for tasty snacks and festive moments with friends.
